Ingredients:
1 dozen eggs
1/4 cup Mayo
1/4 cup full fat sour cream
2 T Dijon mustard
1 tsp white vinegar
2 cloves garlic, minced
1/2 tsp kosher salt
1/4 tsp black pepper
3 strips bacon, cooked
Dill
Chives
Hot sauce
Rub
Directions:
1. Hard boil and peel eggs.
2. Cut eggs in half lengthwise, remove yolks.
3. Mix yolks, Mayo, sour cream, white vinegar, Dijon, garlic, salt, and pepper and beat until smooth. Place in cast iron pan.
4. Cook bacon to preference on crispiness, pat dry, and chop three strips into small bits.
5. Bring smoker to low temperature around 175 degrees. Add choice of wood chips to enhance Smokey flavor.
6. Put egg halves face up in smoker along with mixture in the cast iron pan. Smoke for 30 minutes.
7. Chop dill and chives for toppings.
8. Remove from smoker and place mixture in zip lock bag. Cut the tip of one side of baggie and pipe in mixture to each egg half.
9. Garnish with dill, chives, and hot sauce.
10. Sprinkle favorite rub on top to finish.
